Keto Taiwanese Spicy Minced Pork with Lettuce Wraps

Ingredients

  • 1.5 lbs Ground pork
  • 1 head Lettuce
  • 2 tbsp Soy sauce (tamari for gluten-free)
  • 1 tbsp Rice wine vinegar
  • 1 tbsp Chili garlic sauce
  • 1 inch Ginger
  • 3 cloves Garlic
  • 2 stalks Green onions
  • 1 tsp Sesame oil

Instructions

  1. 1Prepare the lettuce by washing the 1 head of lettuce and carefully separating the leaves. Set aside.
  2. 2Finely mince the 1 inch of ginger and the 3 cloves of garlic. Chop the 2 stalks of green onions into small pieces.
  3. 3Place a 10-inch skillet over medium-high heat, which is about 375°F (190°C). Add the 1 tsp of sesame oil.
  4. 4Add the 1.5 lbs of ground pork to the hot skillet. Cook, breaking it apart with a spoon, until it is browned all over, about 5-7 minutes.
  5. 5Add the minced ginger and minced garlic to the skillet with the pork. Cook for 1 minute more, stirring constantly, until you can smell their fragrance.
  6. 6Pour in the 2 tbsp of soy sauce (tamari for gluten-free) and the 1 tbsp of rice wine vinegar. Stir in the 1 tbsp of chili garlic sauce.
  7. 7Continue to cook the mixture for 5 minutes, stirring occasionally, until the sauce has thickened slightly and coats the pork.
  8. 8Spoon the cooked minced pork mixture into the prepared lettuce cups. Garnish with the chopped green onions.
