Ingredients

  • 1 pound Ground beef
  • 1/2 pound Ground pork
  • 1/4 cup Almond flour
  • 1 Egg
  • 1/2 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 cup Beef broth
  • 1/2 cup Coconut cream
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Xanthan gum
  • 1 head Cauliflower florets
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1In a large bowl, combine the 1 pound ground beef, 1/2 pound ground pork, 1/4 cup almond flour, 1 egg, 1/2 onion (finely chopped), 2 cloves garlic (minced), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix these ingredients thoroughly with your hands until they are well combined.
  2. 2Shape the meat mixture into small meatballs, about 1 to 1.5 inches in diameter.
  3. 3Heat the 2 tablespoons of olive oil in a large 12-inch skillet over medium-high heat, approximately 400°F (200°C).
  4. 4Carefully place the meatballs into the hot skillet, ensuring not to overcrowd the pan (cook in batches if necessary). Cook the meatballs for 8-10 minutes, turning them occasionally, until they are browned on all sides and cooked through. The internal temperature should reach 160°F (71°C).
  5. 5Remove the cooked meatballs from the skillet and set them aside on a plate. Leave the drippings in the skillet.
  6. 6Add the 1 cup beef broth, 1/2 cup coconut cream, and 1 teaspoon Dijon mustard to the same skillet. Bring the liquid to a gentle simmer over medium heat, approximately 300°F (150°C).
  7. 7In a small bowl, whisk the 1/4 teaspoon xanthan gum with a tablespoon of the simmering liquid from the skillet until smooth, then pour this mixture back into the skillet. Continue to whisk constantly for 1-2 minutes until the sauce thickens to your desired consistency.
  8. 8Return the cooked meatballs to the skillet with the thickened sauce. Reduce the heat to low, approximately 200°F (95°C), and let the meatballs simmer in the sauce for 5 minutes to heat through and absorb the flavors.
  9. 9While the meatballs are simmering, place the 1 head cauliflower florets in a steamer basket over boiling water. Steam for 10-15 minutes, or until the cauliflower is very tender when pierced with a fork. Mash the steamed cauliflower using a fork or a food processor until smooth and creamy. Season the cauliflower mash with the remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper.
