Keto Stuffed Cabbage Rolls (Töltött Káposzta)

A keto-friendly version of the classic Hungarian stuffed cabbage rolls, using cauliflower rice instead of regular rice. Simmered in a rich tomato sauce.

Ingredients

  • 1 large head Cabbage
  • 1 lb Ground pork
  • 0.5 lb Ground beef
  • 2 cups Cauliflower rice
  • 1 medium Onion
  • 28 oz Tomato sauce
  • 1 tbsp Smoked paprika
  • 1 Egg
  • 4 slices Bacon
  • 1/2 cup Sour cream
  • 1.5 tsp Salt
  • 0.75 tsp Pepper

Instructions

  1. 1Carefully remove the outer leaves of the cabbage. Blanch the leaves in boiling water for 2-3 minutes until softened.
  2. 2In a large bowl, combine the ground pork, ground beef, cauliflower rice, diced onion, smoked paprika, egg, salt, and pepper.
  3. 3Place a portion of the meat mixture onto each cabbage leaf and roll it up tightly.
  4. 4In a large pot or Dutch oven, layer the bottom with chopped bacon. Arrange the cabbage rolls on top of the bacon.
  5. 5Pour the tomato sauce over the cabbage rolls. Add enough water to cover the rolls.
  6. 6Bring to a simmer, then cover and cook for 90 minutes, or until the cabbage is very tender.
  7. 7Serve hot with a dollop of sour cream.
