Ingredients

  • 2 each Steak (ribeye or sirloin)
  • 1 head Cauliflower
  • 4 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Paprika
  • 2 each Egg yolks
  • 2 tablespoons Lemon juice
  • 1 tablespoon Tarragon
  • 1 tablespoon White wine vinegar
  • 1/4 cup Ghee (dairy-free)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). Cut the 1 head of Cauliflower into pieces that resemble fries, about 1/2-inch thick and 3-4 inches long. In a large bowl, toss the cut cauliflower with 2 tablespoons of Olive oil, 1 teaspoon of Garlic powder, 1/2 teaspoon of Paprika, 1/4 teaspoon of Salt, and 1/8 teaspoon of Black pepper until evenly coated.
  2. 2Spread the seasoned cauliflower fries in a single layer on a large baking sheet. Bake for 20-25 minutes, or until the cauliflower is golden brown at the edges and tender when pierced with a fork.
  3. 3While the cauliflower bakes, prepare a double boiler by setting a heatproof bowl over a small pot of simmering water; ensure the bottom of the bowl does not touch the water. In the heatproof bowl, whisk together the 2 each Egg yolks, 2 tablespoons of Lemon juice, 1 tablespoon of White wine vinegar, 1/8 teaspoon of Salt, and 1/16 teaspoon of Black pepper.
  4. 4Slowly drizzle the 1/4 cup of Ghee (dairy-free) into the egg yolk mixture, whisking constantly and vigorously, until the sauce thickens to a creamy consistency. Remove the bowl from the heat and stir in the 1 tablespoon of Tarragon.
  5. 5Pat the 2 each Steaks dry with paper towels, then season them evenly with the remaining 1/8 teaspoon of Salt and 1/16 teaspoon of Black pepper. Heat a 10-inch or 12-inch skillet over medium-high heat, then add the remaining 2 tablespoons of Olive oil. Once the oil shimmers, carefully place the steaks in the skillet and cook for 3-5 minutes per side for medium-rare, or until an internal temperature of 130-135°F (54-57°C) is reached with a meat thermometer.
  6. 6Transfer the cooked steaks to a cutting board and let them rest for 5 minutes; this allows the juices to redistribute, ensuring a tender and flavorful steak. Serve the rested steaks immediately alongside the baked cauliflower fries and the dairy-free Bearnaise sauce.
