Keto Steak and Kidney Pudding (Dairy-Free)

Ingredients

  • 1.5 lb Stewing Steak
  • 8 oz Beef Kidney
  • 2 cups Beef Broth
  • 1 large Onion
  • 1/2 cup Coconut Flour
  • 1/4 cup Lard
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Thyme
  • 1 Bay Leaf
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Cut the stewing steak and beef kidney into 1-inch cubes.
  2. 2In a large bowl, toss the steak and kidney with salt, pepper, and coconut flour.
  3. 3Heat lard in a large pot or Dutch oven over medium-high heat.
  4. 4Brown the steak and kidney in batches, then remove from the pot and set aside.
  5. 5Add the chopped onion to the pot and cook until softened, about 5 minutes.
  6. 6Return the steak and kidney to the pot. Pour in beef broth and apple cider vinegar. Add thyme and bay leaf.
  7. 7Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the meat is very tender.
  8. 8Remove the bay leaf. Season with additional salt and pepper to taste.
  9. 9Spoon the mixture into a pudding basin or heat-safe bowl.
  10. 10Cover the basin tightly with foil or parchment paper and secure with string.
  11. 11Place the basin in a large pot and add enough water to come halfway up the sides of the basin.
  12. 12Cover the pot and steam for 2-3 hours, or until the pudding is heated through.
  13. 13Carefully remove the basin from the pot and let cool slightly before serving.
