Keto Sri Lankan Chicken Curry with Coconut Cauliflower Rice

Ingredients

  • 1.5 lbs Chicken thighs
  • 2 tbsp Coconut oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Sri Lankan curry powder
  • 1 tsp Turmeric powder
  • 1 Cinnamon stick
  • 10 Curry leaves
  • 1 can Coconut milk
  • 1 tbsp Lime juice
  • 1 head Cauliflower
  • 1/4 cup Unsweetened shredded coconut
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. 1Cut the 1.5 lbs chicken thighs into 1-inch bite-sized pieces. Place a large heavy-bottomed pot or Dutch oven over medium heat (350°F/175°C). Add the 2 tbsp coconut oil to the pot.
  2. 2Add the 1 medium onion, 4 cloves garlic, and 1 inch ginger to the pot. Sauté, stirring occasionally, until the vegetables are softened and the onion is translucent, about 5 minutes.
  3. 3Stir in the 2 tbsp Sri Lankan curry powder, 1 tsp turmeric powder, 1 cinnamon stick, and 10 curry leaves. Cook, stirring constantly, for 1 minute until the spices are very fragrant.
  4. 4Add the 1.5 lbs chicken thighs pieces to the pot. Cook, stirring occasionally, until the chicken is browned on all sides, about 5-7 minutes.
  5. 5Pour in the 1 can coconut milk and stir to combine everything in the pot. Bring the liquid to a gentle simmer, then reduce the heat to low. Cover the pot and let it simmer for 25-30 minutes, or until the chicken is cooked through and tender. The internal temperature of the chicken should reach 165°F (74°C).
  6. 6While the curry is simmering, prepare the cauliflower rice. Take the 1 head cauliflower and grate it using a box grater or pulse it in a food processor until it has a rice-like consistency. Steam or sauté the grated cauliflower in a separate pan until it is tender-crisp, about 5-7 minutes.
  7. 7Stir the 1 tbsp lime juice into the chicken curry. Season the curry with 1 tsp salt and 1/2 tsp pepper to your preference.
  8. 8Stir the 1/4 cup unsweetened shredded coconut into the prepared cauliflower rice. Season the cauliflower rice with a pinch of salt and pepper.
  9. 9Serve the Sri Lankan chicken curry spooned over the coconut cauliflower rice.
