Keto Spanish Pork Tenderloin with Green Beans

Ingredients

  • 1.5 lbs Pork tenderloin
  • 2 tablespoons Olive oil
  • 1 tablespoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried oregano
  • 1 lb Green beans
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a small bowl, combine the 1 tablespoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried oregano, 1 teaspoon salt, and 0.5 teaspoon black pepper. Mix these spices together thoroughly.
  3. 3Rub the entire spice mixture all over the 1.5 lbs pork tenderloin, ensuring it is evenly coated.
  4. 4Heat the 2 tablespoons olive oil in an oven-safe skillet over medium-high heat until it shimmers.
  5. 5Carefully place the seasoned pork tenderloin into the hot skillet. Sear it on all sides until it is nicely browned, which should take about 2-3 minutes per side.
  6. 6Transfer the oven-safe skillet with the seared pork tenderloin directly into the preheated oven. Roast for 15-20 minutes, or until a meat thermometer inserted into the thickest part registers an internal temperature of 145°F (63°C).
  7. 7While the pork is roasting, trim the ends off the 1 lb green beans. Set them aside.
  8. 8Once the pork reaches 145°F (63°C), carefully remove the skillet from the oven. Transfer the pork tenderloin to a cutting board and let it rest for 5-10 minutes. This resting period is important to keep the juices inside the meat.
  9. 9While the pork is resting, place the same skillet back on the stovetop over medium-high heat. Add a little more olive oil if needed, then add the trimmed 1 lb green beans. Sauté the green beans for 5-7 minutes, stirring occasionally, until they are tender but still have a slight crispness. Season the green beans with a pinch of salt and black pepper.
  10. 10Slice the rested pork tenderloin into medallions and serve immediately with the sautéed green beans.
