Ingredients

  • 1.5 lbs Ground lamb
  • 1/4 cup Almond flour
  • 1 large Egg
  • 3 cloves Garlic
  • 2 tablespoons Fresh parsley

  • 1 medium Onion
  • 1 28 oz can Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1/2 cup Chicken broth
  • 1/2 teaspoon Smoked paprika
  • 1/4 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1In a large bowl, combine the 1.5 lbs ground lamb, 1/4 cup almond flour, 1 large egg, 3 cloves garlic (minced), 2 tablespoons fresh parsley (chopped), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix everything together with your hands until just combined; do not overmix.
  2. 2Roll the lamb mixture into small meatballs, about 1 to 1.5 inches in diameter. You should have about 16-20 meatballs.
  3. 3Heat 2 tablespoons of olive oil in a large skillet (at least 12 inches) over medium-high heat, about 400°F (200°C).
  4. 4Carefully place the meatballs into the hot skillet in a single layer, working in batches if necessary to avoid overcrowding. Cook for 5-7 minutes, turning them occasionally, until they are browned on all sides. Remove the browned meatballs from the skillet and set them aside on a plate.
