Keto 'Slavinken' (Meat Rolls) with Mustard Greens

Keto-friendly version of Dutch 'Slavinken,' ground meat rolls wrapped in bacon. Served with sauteed mustard greens.

Ingredients

  • 1 lb Ground Beef
  • 1/2 lb Ground Pork
  • 1/4 cup Almond Flour
  • 1 Egg
  • 1/2 Onion
  • 1/2 teaspoon Spices (Nutmeg, Cloves, Pepper)
  • 8 slices Bacon
  • 8 cups Mustard Greens
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper

Instructions

  1. 1In a bowl, combine ground beef, ground pork, almond flour, egg, onion, and spices. Mix well.
  2. 2Divide the meat mixture into 4 equal portions.
  3. 3Shape each portion into a roll.
  4. 4Wrap each roll with 2 slices of bacon, securing with toothpicks if needed.
  5. 5Heat olive oil in a large pan over medium heat.
  6. 6Sear the meat rolls on all sides until bacon is crispy and meat is cooked through.
  7. 7Remove the meat rolls from the pan and set aside.
  8. 8In the same pan, sauté the mustard greens and garlic until wilted (about 5-7 minutes).
  9. 9Season with salt and pepper.
  10. 10Serve the 'Slavinken' with the sautéed mustard greens.
