Keto Sinigang with Shrimp

Ingredients

  • 1 lb Shrimp
  • 6 cups Spinach
  • 1 cup Radishes
  • 1 cup Green Beans
  • 2 tbsp Tamarind Paste
  • 1 medium Onion
  • 4 cloves Garlic
  • 2 tbsp Fish Sauce
  • 6 cups Water

Instructions

  1. 1Place a large pot on the stove over high heat and add the 6 cups of water. Bring the water to a rolling boil, which is when large bubbles rapidly break the surface.
  2. 2Add the medium onion, cut into quarters, and the 4 cloves of garlic, smashed with the side of a knife, to the boiling water. Reduce the heat to medium-low, cover the pot, and simmer for 5 minutes.
  3. 3Stir in the 2 tablespoons of tamarind paste and the 2 tablespoons of fish sauce until the tamarind paste is fully dissolved. Let this mixture simmer gently for 2 minutes.
  4. 4Add the 1 lb of shrimp, 1 cup of green beans, and 1 cup of radishes to the pot. Cook uncovered over medium heat for 5 to 7 minutes, or until the shrimp turn opaque pink and are cooked through. The vegetables should be tender but still have a slight crispness.
  5. 5Stir in the 6 cups of spinach. Continue to cook for 1 to 2 minutes, or until the spinach leaves are wilted.
  6. 6Serve the Keto Sinigang with Shrimp hot.
