Keto Sinigang with Pork Belly

A sour and savory Filipino soup made with pork belly and vegetables. Tamarind paste provides the signature sourness. This keto version uses low-carb vegetables like radish and bok choy.

Ingredients

  • 1.5 lbs Pork belly
  • 8 cups Water
  • 2 tbsp Tamarind paste
  • 1 bunch Radish
  • 1 head Bok choy
  • 1 medium Onion
  • 1 inch Ginger
  • 1 tbsp Fish sauce
  • 1 cup Green beans
  • 2 cups Spinach

Instructions

  1. 1Place the 1.5 lbs of pork belly into a large, heavy-bottomed pot. Add the 8 cups of water. Bring the water to a rolling boil over high heat, about 5-7 minutes.
  2. 2Once boiling, reduce the heat to low. Add the 1 medium onion, cut into quarters, and the 1 inch of ginger, smashed. Cover the pot and let it simmer gently for 45-60 minutes, or until the pork belly is fork-tender. Skim off any foam that rises to the surface during simmering.
  3. 3Stir in the 2 tbsp of tamarind paste and the 1 tbsp of fish sauce until fully combined. Bring the soup back to a gentle simmer over medium heat.
  4. 4Add the bunch of radish, trimmed and cut into 1-inch thick rounds, and the 1 cup of green beans, trimmed and cut into 2-inch pieces. Cook for 5 minutes, or until the radish is slightly tender.
  5. 5Add the head of bok choy, separated into leaves and stems, and the 2 cups of spinach. Cook for 1-2 minutes, or just until the bok choy and spinach have wilted.
  6. 6Serve the Keto Sinigang with Pork Belly hot.
