Keto Sinigang with Pork and Radishes

Ingredients

  • 1 lb Pork belly
  • 1 bunch Radishes
  • 5 oz Spinach
  • 2 tbsp Tamarind paste
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 tbsp Fish sauce
  • 8 cups Water

Instructions

  1. 1Place the 8 cups of water into a large heavy-bottomed pot and bring it to a rolling boil over high heat, about 5-7 minutes. Add the 1 lb of pork belly, the medium onion (peeled and quartered), and the 4 cloves of garlic (peeled and smashed) to the boiling water. Reduce the heat to medium-low, cover the pot, and let it simmer gently for 30 minutes, or until the pork belly is fork-tender. The water should be barely bubbling.
  2. 2Add the bunch of radishes (trimmed and cut into 1/2-inch thick rounds) and the 2 tbsp of tamarind paste to the pot. Stir everything together. Increase the heat slightly to medium and continue to simmer, uncovered, for 10 minutes, allowing the flavors to meld.
  3. 3Stir in the 5 oz of spinach and the 1 tbsp of fish sauce. Cook for 1-2 minutes, or until the spinach leaves are just wilted. Do not overcook the spinach.
  4. 4Serve the Keto Sinigang hot immediately.
