Ingredients

  • 2 cans Hearts of Palm
  • 2 tbsp Coconut Oil
  • 4 cloves Garlic
  • 1 inch Ginger
  • 2 small Red Chilies
  • 2 tbsp Tomato Paste
  • 1 cup Chicken Broth
  • 2 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1 tsp Erythritol
  • 1 large Egg
  • 2 tbsp Green Onions

Instructions

  1. 1Drain and rinse hearts of palm. Chop into bite-sized pieces.
  2. 2Heat coconut oil in a large skillet over medium heat.
  3. 3Add garlic, ginger, and red chilies and cook until fragrant, about 1 minute.
  4. 4Add tomato paste and cook for 1 minute, stirring constantly.
  5. 5Pour in chicken broth, soy sauce, and rice vinegar. Bring to a simmer.
  6. 6Add hearts of palm and erythritol. Cook for 10 minutes, stirring occasionally.
  7. 7Whisk egg in a small bowl. Slowly drizzle into the sauce while stirring constantly.
  8. 8Serve hot. Garnish with green onions.
