Ingredients

  • 8 oz Shrimp
  • 1/2 cup Mayonnaise (Soy-Free)
  • 1/4 cup Red Onion
  • 2 tablespoons Fresh Dill
  • 1 tablespoon Lemon Juice
  • 1/4 teaspoon Black Pepper
  • 6 leaves Butter Lettuce

Instructions

  1. 1Place the 8 oz shrimp in a saucepan with enough water to cover. Bring to a boil over high heat, then reduce heat to medium and cook for 3-5 minutes, or until the shrimp are pink and opaque. Drain the shrimp and let them cool completely for about 10 minutes. Once cool, cut the 8 oz shrimp into 1/2-inch pieces.
  2. 2In a medium bowl, combine the 1/2 cup mayonnaise, 1/4 cup finely diced red onion, 2 tablespoons fresh dill, 1 tablespoon lemon juice, and 1/4 teaspoon black pepper. Add the cooled, chopped 8 oz shrimp to the bowl.
  3. 3Gently stir all the ingredients in the bowl together until the shrimp and red onion are evenly coated with the mayonnaise mixture. Ensure everything is well combined.
  4. 4Wash the 6 leaves of butter lettuce. Pat them dry gently with a paper towel.
  5. 5Spoon about 2-3 tablespoons of the Shrimp Skagen salad mixture into each of the 6 butter lettuce leaves.
