Ingredients

  • 1 lb Shrimp
  • 2 packs Shirataki Rice
  • 2 large Eggs
  • 2 tbsp Tamari Soy Sauce
  • 1 tbsp Sesame Oil
  • 3 stalks Green Onions
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 1/2 cup Mixed Vegetables (Carrots, Peas)

Instructions

  1. 1Open the 2 packs of Shirataki Rice and drain them. Rinse the rice under cold running water for at least 30 seconds. Place the rinsed rice in a dry 10-inch skillet over medium-high heat (375°F/190°C). Cook, stirring occasionally, for 5-7 minutes, or until any excess moisture has evaporated and the rice looks drier.
  2. 2While the shirataki rice is drying, crack the 2 large Eggs into a small bowl and whisk them lightly. Heat a separate 12-inch skillet or wok over medium-high heat (375°F/190°C). Add the whisked eggs and cook, stirring gently, until they form soft curds and are just cooked through, about 1-2 minutes. Remove the scrambled eggs from the skillet and set them aside on a plate.
  3. 3Add the 1 lb Shrimp to the same 12-inch skillet or wok over medium-high heat (375°F/190°C). Cook for 3-5 minutes, stirring occasionally, until the shrimp turn pink and opaque and reach an internal temperature of 145°F (63°C). Remove the shrimp from the skillet and set them aside with the eggs.
  4. 4Add the 1 tbsp Sesame Oil to the 12-inch skillet or wok and heat over medium-high heat (375°F/190°C) until shimmering, about 30 seconds.
  5. 5Add the 2 cloves Garlic, minced, and the 1 tsp Ginger, minced, to the hot sesame oil. Cook, stirring constantly, for 30 seconds until fragrant. Be careful not to burn the garlic.
  6. 6Add the prepared shirataki rice (from step 1) and the 1/2 cup Mixed Vegetables (Carrots, Peas) to the skillet. Stir-fry for 5 minutes, until the vegetables are tender-crisp and the shirataki rice is heated through.
  7. 7Return the cooked shrimp and scrambled eggs to the skillet. Add the 2 tbsp Tamari Soy Sauce. Stir everything together gently for 1-2 minutes, until well combined and heated through.
  8. 8Chop the 3 stalks Green Onions. Serve the Keto Shrimp Fried 'Rice' immediately, garnished with the chopped green onions.
