Ingredients

  • 1 lb Shrimp
  • 8 oz Spanish chorizo
  • 2 tablespoons Olive oil
  • 1 large Red bell pepper
  • 1/2 cup Almonds
  • 2 cloves Garlic
  • 2 tablespoons Tomato paste
  • 1 tablespoon Red wine vinegar
  • 1/2 teaspoon Smoked paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat your grill to medium-high heat, which is about 400-450°F (200-230°C).
  2. 2Cut the 8 oz Spanish chorizo into 1-inch pieces. Thread the 1 lb shrimp and the 1-inch chorizo pieces onto skewers, alternating between them.
  3. 3Place the prepared skewers on a clean surface. Brush them all over with the 2 tablespoons of olive oil. Sprinkle evenly with the 1/2 teaspoon of salt and the 1/4 teaspoon of black pepper.
  4. 4Place the seasoned skewers on the preheated grill. Grill for 2-3 minutes per side. The shrimp should turn pink and opaque, and the chorizo should be browned and slightly crispy.
  5. 5While the skewers grill, prepare the romesco sauce. Place the 1 large red bell pepper directly on the grill grates over medium-high heat. Roast for 8-10 minutes, turning occasionally, until the skin is completely blackened and blistered.
  6. 6Transfer the roasted red bell pepper to a bowl and cover it tightly with plastic wrap. Let it steam and cool for 10-15 minutes; this makes the skin easier to remove.
  7. 7Once cooled enough to handle, peel the blackened skin off the red bell pepper. Remove and discard the stem and seeds. Place the peeled pepper into a food processor or blender.
  8. 8Add the 1/2 cup of almonds, 2 cloves of garlic (peeled), 2 tablespoons of tomato paste, 1 tablespoon of red wine vinegar, 1/2 teaspoon of smoked paprika, the remaining 1/2 teaspoon of salt, and the remaining 1/4 teaspoon of black pepper to the food processor with the pepper.
  9. 9Process all ingredients in the food processor until the sauce is smooth and well combined. Taste and add a tiny bit more salt or vinegar if desired, but do not add more than listed.
  10. 10Serve the grilled shrimp and chorizo skewers immediately with the freshly made romesco sauce on the side.
