Keto Shepherd's Pie with Cauliflower Mash

Ingredients

  • 1 lb Ground Lamb
  • 1 large head Cauliflower
  • 1 cup Beef Broth
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 2 tbsp Tomato Paste
  • 1 tbsp Worcestershire Sauce
  • 2 tbsp Olive Oil
  • 1/2 cup Almond Milk
  • 2 tbsp Nutritional Yeast
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Heat 2 tablespoons of olive oil in a large 12-inch skillet over medium-high heat. Add the 1 pound of ground lamb and cook, breaking it up with a spoon, until it is browned all over. Drain off any excess grease from the skillet.
  3. 3Add the chopped 1 medium onion, 2 medium carrots, and 2 stalks of celery to the skillet with the lamb. Cook, stirring occasionally, for 5 to 7 minutes, or until the vegetables have softened.
  4. 4Stir in the 3 cloves of minced garlic and 2 tablespoons of tomato paste. Cook for 1 minute more, stirring constantly, until fragrant.
  5. 5Pour in the 1 cup of beef broth and 1 tablespoon of Worcestershire sauce. Add 1 teaspoon of salt and 1/2 teaspoon of black pepper. Bring the mixture to a simmer, then reduce the heat to medium-low and cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly.
  6. 6While the lamb mixture is simmering, prepare the cauliflower mash. Cut the 1 large head of cauliflower into florets and steam or boil them until they are very tender when poked with a fork, about 10 to 15 minutes.
  7. 7Drain the cooked cauliflower well. Transfer the tender cauliflower to a food processor or a large bowl. Add the 1/2 cup of almond milk and 2 tablespoons of nutritional yeast. Process or mash with a potato masher until the cauliflower is smooth and creamy. Season with additional salt and pepper to taste if desired.
  8. 8Pour the thickened lamb mixture into a baking dish. Spread the prepared cauliflower mash evenly over the top of the lamb mixture.
  9. 9Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the cauliflower mash is lightly golden brown on top.
  10. 10Let the shepherd's pie cool for at least 5 minutes before serving. This allows the filling to set slightly.
