Keto Shepherd's Pie with Cauliflower Mash

Ingredients

  • 1.5 pounds Ground beef
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 2 cloves Garlic
  • 1 cup Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Thyme
  • 1 large head Cauliflower
  • 4 tablespoons Butter
  • 1/2 cup Heavy cream
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a large 12-inch skillet, add the 1.5 pounds of ground beef. Cook over medium-high heat until it is browned. Carefully drain off any excess grease from the skillet.
  3. 3Add the 1 medium onion, 2 medium carrots, and 2 stalks of celery to the skillet with the beef. Cook, stirring occasionally, until the vegetables are softened, which should take about 5 to 7 minutes. Add the 2 cloves of garlic and cook for 1 more minute until you can smell it.
  4. 4Stir in the 1 cup of beef broth, 2 tablespoons of tomato paste, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of thyme. Bring this mixture to a simmer, then reduce the heat to medium-low and cook for 10 minutes, stirring occasionally, until the sauce has thickened.
  5. 5While the meat mixture is simmering, prepare the cauliflower. Place the 1 large head of cauliflower into a steamer basket over boiling water or into a pot of boiling water. Cover and steam or boil until the cauliflower is very tender, about 10-15 minutes. Drain the cauliflower very well.
  6. 6Transfer the drained cauliflower to a food processor or blender. Add the 4 tablespoons of butter and the 1/2 cup of heavy cream. Process until the cauliflower is completely smooth and creamy. Season the cauliflower mash with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  7. 7Pour the thickened meat mixture from the skillet into a baking dish. Carefully spread the prepared cauliflower mash evenly over the top of the meat mixture.
  8. 8Place the baking dish into the preheated oven. Bake for 20 to 25 minutes, or until the cauliflower mash on top is lightly golden brown. Serve immediately.
