Ingredients

  • 2 lbs Ground Lamb
  • 1 large head Cauliflower
  • 1 cup Beef Broth
  • 1 medium Onion
  • 2 stalks Celery
  • 1 medium Carrots
  • 4 cloves Garlic
  • 2 tbsp Tomato Paste
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • 4 tbsp Butter
  • 1/4 cup Heavy Cream
  • 1/2 cup Cheddar Cheese

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Cut the 1 large head of cauliflower into florets. Steam or boil the cauliflower florets until they are very tender, easily pierced with a fork, about 10-15 minutes. Drain the cooked cauliflower very well, then transfer it to a large bowl. Add the 4 tbsp of butter, 1/4 cup of heavy cream, and 1/2 cup of shredded cheddar cheese, and mash until smooth.
  3. 3In a large (e.g., 12-inch) skillet, brown the 2 lbs of ground lamb over medium-high heat, breaking it up with a spoon, until it is no longer pink and cooked through, about 8-10 minutes. Carefully drain off any excess grease from the skillet.
  4. 4Dice the 1 medium onion, 2 stalks of celery, and 1 medium carrot into 1/4-inch pieces. Add the diced 1 medium onion, 2 stalks of celery, and 1 medium carrot to the skillet with the lamb. Cook over medium heat, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  5. 5Mince the 4 cloves of garlic. Stir the minced 4 cloves of garlic, 2 tbsp of tomato paste, 1 tbsp of Worcestershire sauce, 1 tsp of thyme, and 1 tsp of rosemary into the lamb and vegetable mixture. Cook for 1 minute, stirring constantly, until fragrant.
  6. 6Pour in the 1 cup of beef broth. Bring the mixture to a gentle simmer over medium heat and cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly and reduced.
  7. 7Transfer the cooked lamb mixture evenly into a 9x13 inch (23x33 cm) baking dish. Carefully spread the prepared cauliflower mash evenly over the top of the lamb filling, using a spoon or spatula.
  8. 8Bake the shepherd's pie in the preheated oven at 375°F (190°C) for 20-25 minutes, or until the cauliflower mash topping is golden brown and the filling is bubbly around the edges.
  9. 9Let the shepherd's pie cool for at least 5-10 minutes before serving. This allows the filling to set, making it easier to serve.
