Ingredients

  • 1 cup Coconut flour
  • 2 tbsp Psyllium husk powder
  • 1 cup Warm water
  • 1/2 tsp Sea salt
  • 1 cup Green onions, chopped
  • 2 tbsp Sesame oil
  • 2 tbsp Avocado oil, for frying

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a large bowl, combine the 1 cup coconut flour, 2 tablespoons psyllium husk powder, and 1/2 teaspoon sea salt. Whisk them together until well mixed.
  2. 2Gradually pour in the 1 cup warm water while stirring constantly with a spoon or your hands until a cohesive dough forms. Knead the dough in the bowl for 2-3 minutes until it feels smooth and pliable.
  3. 3Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rest for 15 minutes at room temperature. This allows the psyllium husk powder to absorb the water and thicken the dough.
  4. 4Divide the rested dough into 4 equal portions. On a clean, lightly floured surface (use a little extra coconut flour if needed), flatten each portion into a thin circle, about 15.24-20.32 cm in diameter.
  5. 5Brush the surface of each dough circle evenly with the 2 tablespoons sesame oil, then generously sprinkle the 1 cup chopped green onions over the oil.
  6. 6Starting from one edge, tightly roll up each oiled and sprinkled circle into a long, thin log. Then, gently coil each log into a flat spiral shape. Press down on the top of each spiral with your palm or a rolling pin to flatten it into a pancake about 0.635 cm thick.
  7. 7Heat the 2 tablespoons avocado oil in a 25.4 cm non-stick skillet over medium heat, which is about 175°C. Once the oil is shimmering, carefully place the pancakes into the skillet. Fry for 4-5 minutes per side, until they are golden brown and crispy to the touch.
