Keto Satay with Peanut-Free Sauce

Ingredients

  • 1.5 lbs Chicken or beef
  • 2 tablespoons Soy sauce (keto-friendly)
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 2 cloves Garlic
  • 1 inch Ginger
  • 2 tablespoons Lime juice
  • 1/4 cup Almond butter (for sauce)
  • 1/2 cup Coconut milk (for sauce)
  • 1 tablespoon Soy sauce (for sauce)
  • 1 tablespoon Swerve sweetener (for sauce)
  • 1/4 teaspoon Chili flakes (for sauce)

Instructions

  1. 1Cut the 1.5 lbs of chicken or beef into 1-inch bite-sized pieces.
  2. 2In a bowl, combine the chicken or beef pieces with 2 tablespoons of soy sauce, 1 teaspoon of turmeric powder, 1 teaspoon of coriander powder, 1/2 teaspoon of cumin powder, 2 cloves of minced garlic, 1 inch of grated ginger, and 2 tablespoons of lime juice. Mix well to ensure all pieces are coated, then cover and let marinate for at least 30 minutes.
  3. 3Thread the marinated chicken or beef pieces evenly onto skewers.
  4. 4Preheat your grill to medium heat (approximately 350°F or 175°C). Grill the skewers for 10-12 minutes, turning them occasionally, until the meat is cooked through and has a nice char. For chicken, ensure the internal temperature reaches 165°F (74°C). For beef, aim for an internal temperature of 135°F (57°C) for medium-rare, or higher depending on your preference.
  5. 5While the skewers are grilling, prepare the sauce. In a small saucepan over medium-low heat (approximately 300°F or 150°C), combine 1/4 cup of almond butter, 1/2 cup of coconut milk, 1 tablespoon of soy sauce, 1 tablespoon of Swerve sweetener, and 1/4 teaspoon of chili flakes. Stir constantly until the sauce is smooth and has thickened slightly, about 5-7 minutes. Do not let it boil.
  6. 6Remove the skewers from the grill and let them rest for 2-3 minutes before serving. Serve the grilled satay skewers with the warm peanut-free sauce on the side for dipping.
