Keto Satay Chicken Skewers (No Peanut Sauce)

Ingredients

  • 1.5 lbs Chicken thighs
  • 3 tbsp Coconut aminos
  • 1 inch Ginger
  • 3 cloves Garlic
  • 1 tsp Turmeric powder
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Red pepper flakes
  • 2 tbsp Coconut oil
  • 1 tbsp Sesame seeds

Instructions

  1. 1Cut the 1.5 lbs of chicken thighs into 1-inch bite-sized pieces.
  2. 2In a medium bowl, combine the 3 tbsp of coconut aminos, 1 inch of ginger (grated), 3 cloves of garlic (minced), 1 tsp of turmeric powder, 1 tsp of cumin, 1 tsp of coriander, and 0.5 tsp of red pepper flakes. Stir well to create the marinade.
  3. 3Add the cut chicken pieces to the bowl with the marinade. Toss to ensure every piece is coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
  4. 4Thread the marinated chicken pieces onto skewers, leaving a small space between each piece.
  5. 5Place a grill pan or a 12-inch skillet over medium-high heat (400°F / 200°C). Add the 2 tbsp of coconut oil to the hot pan.
  6. 6Carefully place the skewers in the hot pan. Cook for 6 to 8 minutes on each side. The chicken is cooked through when it is no longer pink inside and reaches an internal temperature of 165°F (74°C).
  7. 7Remove the cooked chicken skewers from the pan and arrange them on a serving plate. Sprinkle the 1 tbsp of sesame seeds over the skewers. Serve hot.
