Ingredients

  • 1 lb Prawns (Large)
  • 4-5 Red Chilies
  • 3 Shallots
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 stalk Lemongrass
  • 2 tbsp Lime Juice
  • 2 tbsp Coconut Aminos
  • 2 tbsp Avocado Oil
  • to taste Salt

Instructions

  1. 1Prepare the sambal paste: In a food processor, combine the 4-5 red chilies, 3 shallots, 4 cloves garlic, and 1 inch ginger. Blend until you have a smooth paste.
  2. 2Heat the 2 tbsp avocado oil in a large wok or pan over medium heat, which is about 350°F (175°C). Add the prepared sambal paste and 1 stalk lemongrass (bruised or finely chopped). Sauté for 2-3 minutes, stirring constantly, until the paste is fragrant and slightly darkened.
  3. 3Add the 1 lb large prawns to the pan. Cook for 3-5 minutes, stirring occasionally, until the prawns turn pink and opaque. Ensure they reach an internal temperature of 145°F (63°C).
  4. 4Stir in the 2 tbsp lime juice and 2 tbsp coconut aminos. Cook for another minute, allowing the flavors to meld.
  5. 5Season the prawns with salt to taste. Serve immediately.
