Keto Rouladen with Bacon and Pickles

Ingredients

  • 1.5 lbs Beef Round Steak, thinly sliced
  • 8 slices Bacon, sliced
  • 4 Dill Pickles, quartered
  • 1 medium Onion, thinly sliced
  • 4 tbsp Mustard (Dijon)
  • 2 cups Beef Broth
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Olive Oil
  • 1 tsp Xanthan Gum
  • to taste Salt
  • to taste Pepper

Instructions

  1. 1Lay the 4 slices of 1.5 lbs Beef Round Steak flat on a clean work surface. Evenly spread 4 tbsp of Dijon Mustard over one side of each beef slice.
  2. 2On the mustard-covered side of each beef slice, place 2 slices of the 8 slices of Bacon, 1 quartered Dill Pickle, and a few slices of the 1 medium Onion. Tightly roll up each beef slice to enclose the filling, then secure each of the 4 rouladen with toothpicks or kitchen twine to prevent unrolling.
  3. 3Heat 2 tbsp of Olive Oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat (approximately 400°F / 200°C). Once the oil is shimmering, carefully place the 4 secured rouladen into the hot skillet. Sear the rouladen on all sides for a total of 5-7 minutes, until they are nicely browned and caramelized.
  4. 4Pour 2 cups of Beef Broth and 2 tbsp of Red Wine Vinegar into the skillet with the seared rouladen. Increase the heat to medium-high (approximately 400°F / 200°C) and bring the liquid to a gentle simmer.
  5. 5Reduce the heat to low (approximately 250°F / 120°C), cover the skillet tightly, and let the rouladen simmer for 1 hour to 1 hour and 30 minutes. The beef is done when it is fork-tender. Season the liquid with salt and pepper to taste.
  6. 6Carefully remove the 4 cooked rouladen from the skillet and transfer them to a plate, covering them loosely to keep them warm. In a small separate bowl, whisk together 1 tsp of Xanthan Gum with 1 tbsp of cold water until a smooth, lump-free slurry forms.
  7. 7Increase the heat under the skillet to medium (approximately 300°F / 150°C). Gradually whisk the xanthan gum slurry into the simmering sauce in the skillet. Continue to whisk and simmer for 2-3 minutes, until the sauce has thickened slightly to your desired consistency.
  8. 8Return the 4 rouladen to the thickened sauce in the skillet. Spoon some of the sauce over them and allow them to heat through for about 5 minutes. Before serving, carefully remove and discard any toothpicks or kitchen twine from each rouladen. Serve warm.
