Traditional German Rouladen made keto-friendly, filled with bacon, onions, and pickles, and braised to perfection. Xanthan gum is used for thickening.

Ingredients

  • 1 lb Beef Round Steak
  • 4 slices Bacon
  • 1 medium Onion
  • 4 small Pickles (ensure soy-free)
  • 2 tbsp Mustard (ensure soy-free)
  • 2 cups Beef Broth
  • 1/2 tsp Xanthan Gum
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions

  1. 1Preheat your oven to 350°F (175°C). Slice the 1 lb Beef Round Steak into 4 equal portions. Place each portion between two sheets of plastic wrap and pound them to about 1/4 inch thickness using a meat mallet or rolling pin.
  2. 2Lay each pounded beef cutlet flat. Spread 1/2 tbsp of the 2 tbsp Mustard (ensure soy-free) evenly over each cutlet. Top each with 1 slice of Bacon, about 1/4 of the medium Onion (finely chopped), and 1 small Pickle (ensure soy-free) spear.
  3. 3Carefully roll up each beef cutlet tightly, starting from one of the shorter sides, to enclose the filling. Secure each roulade firmly with toothpicks or kitchen twine to prevent it from unrolling during cooking.
  4. 4Heat the 2 tbsp Olive Oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat (400°F / 200°C).
  5. 5Carefully place the secured rouladen into the hot skillet. Brown them on all sides until deeply golden brown, about 2-3 minutes per side. This searing will take approximately 8-12 minutes total.
  6. 6Pour the 2 cups of Beef Broth into the skillet with the browned rouladen. Bring the liquid to a gentle simmer over medium-high heat (400°F / 200°C). Once simmering, reduce the heat to low (250°F / 120°C), cover the skillet tightly, and let the rouladen simmer for 1 to 1.5 hours, or until the beef is very tender when pierced with a fork.
  7. 7Carefully remove the 4 rouladen from the skillet and place them on a plate. Remove and discard the toothpicks or kitchen twine. Set the rouladen aside.
  8. 8In a small bowl, whisk together the 1/2 tsp Xanthan Gum with 1 tbsp of cold water until smooth, creating a slurry. Pour this slurry into the simmering beef broth in the skillet. Stir constantly and cook over medium heat (300°F / 150°C) for 1-2 minutes, or until the sauce has thickened to your desired consistency.
  9. 9Return the 4 rouladen to the thickened sauce in the skillet. Spoon some of the sauce over them and let them heat through gently for about 5 minutes over low heat (250°F / 120°C). Season the sauce with the 1/2 tsp Salt and 1/4 tsp Black Pepper. Serve the rouladen hot with the thickened sauce.
