Ingredients

  • 2 cups Cauliflower Rice
  • 1/2 cup Almond Flour
  • 1/4 cup Grated Parmesan Cheese
  • 2 tablespoons Melted Butter
  • 6 slices Bacon
  • 1 cup Heavy Cream
  • 1/2 cup Shredded Gruyère Cheese
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Prepare the cauliflower crust: Mix cauliflower rice, almond flour, parmesan cheese, and melted butter in a bowl. Press the mixture into muffin tins to form crusts.
  3. 3Bake the crusts for 10 minutes.
  4. 4Cook bacon until crispy, then crumble.
  5. 5In a bowl, whisk together heavy cream, Gruyère cheese, nutmeg, salt, and pepper.
  6. 6Sprinkle crumbled bacon into the baked crusts.
  7. 7Pour the cream mixture over the bacon.
  8. 8Bake for 15-20 minutes, or until the filling is set and golden brown.
  9. 9Let cool slightly before serving.
