Keto Porkolt with Zucchini Noodles

Ingredients

  • 2 lbs Pork shoulder
  • 4 medium Zucchini
  • 2 large Onion
  • 4 cloves Garlic
  • 3 tbsp Sweet paprika
  • 4 tbsp Tomato paste
  • 2 cups Beef broth
  • 2 tbsp Bacon fat
  • 0.5 cup Sour cream
  • 1.5 tsp Salt
  • 1 tsp Black pepper

Instructions

  1. 1Cut the pork shoulder into 1-inch cubes. Chop the onions and mince the garlic.
  2. 2Heat bacon fat in a large pot or Dutch oven over medium heat. Add the pork and brown on all sides.
  3. 3Remove the pork from the pot and set aside. Add the onions and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  4. 4Stir in the paprika and tomato paste. Cook for a few minutes until the paste is slightly caramelized.
  5. 5Return the pork to the pot. Pour in the beef broth, bring to a simmer, then cover and cook for 2-2.5 hours, or until the pork is very tender.
  6. 6While the pork is cooking, spiralize the zucchini into noodles.
  7. 7Stir in sour cream (optional). Season with salt and pepper to taste. Serve the porkolt over zucchini noodles.
