Keto Pirozhki with Cabbage and Egg Filling

Ingredients

  • 2 cups Almond flour
  • 2 tbsp Psyllium husk powder
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 2 large Eggs
  • 1/4 cup Melted butter
  • 4 cups Cabbage, shredded
  • 1/2 medium Onion, chopped
  • 3 large Hard-boiled eggs, chopped
  • 2 tbsp Avocado oil
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2In a large bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  3. 3In a separate bowl, whisk together eggs and melted butter.
  4. 4Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. 5In a skillet, heat avocado oil over medium heat. Add cabbage and onion and cook until softened, about 10 minutes.
  6. 6Stir in hard-boiled eggs, salt, and pepper.
  7. 7Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness.
  8. 8Cut out circles using a cookie cutter or glass.
  9. 9Place a spoonful of the cabbage and egg mixture in the center of each circle.
  10. 10Fold the dough over to form a half-moon shape and crimp the edges to seal.
  11. 11Place the pirozhki on a baking sheet lined with parchment paper.
  12. 12Bake for 20-25 minutes, or until golden brown.
