Ingredients

  • 2 Green plantains
  • 1 tablespoon Coconut oil
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 0.5 teaspoon Turmeric powder
  • 2 cans Coconut milk
  • 1 cup Chicken broth
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 2 tablespoons Cilantro

Instructions

  1. 1Peel and slice the green plantains into 1/2 inch thick rounds.
  2. 2Heat the coconut oil in a large pot over medium heat.
  3. 3Add the diced onion and cook until softened, about 5 minutes.
  4. 4Add the minced garlic and grated ginger, cook for 1 minute.
  5. 5Stir in the turmeric powder.
  6. 6Add the sliced green plantains, coconut milk, and chicken broth to the pot.
  7. 7Bring to a simmer, then reduce heat and cover. Cook for 20-25 minutes, or until the plantains are tender.
