Ingredients

  • 4 cups Cauliflower rice
  • 1 can Coconut cream
  • 2 leaves Pandan leaves
  • 1 medium Cucumber
  • 4 Hard-boiled eggs
  • 4 tbsp Sambal
  • 1/2 cup Fried anchovies
  • 1/4 cup Peanuts
  • 4 Chicken thighs
  • 1 tsp Turmeric powder
  • 1/2 tsp Chili powder
  • 2 cloves Garlic
  • 2.54 cm Ginger
  • 1 Lime

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a bowl, combine the 4 chicken thighs with 1 tsp turmeric powder, 1/2 tsp chili powder, 2 cloves minced garlic, and 2.54 cm grated ginger. Mix well to coat the chicken evenly. Let it marinate for at least 10 minutes.
  2. 2Heat a grill or a large skillet over medium-high heat (204.4°C / 200°C). Cook the marinated chicken thighs for 6-8 minutes per side, or until the internal temperature reaches 74°C and they are cooked through. Set aside to rest for 5 minutes.
  3. 3In a medium saucepan, combine 4 cups cauliflower rice, 1 can coconut cream, and 2 pandan leaves. Bring to a simmer over medium heat (176.7°C / 175°C), then reduce heat to low, cover, and cook for 10-15 minutes, or until the cauliflower rice is tender and has absorbed most of the liquid. Remove and discard the pandan leaves.
  4. 4While the cauliflower rice is cooking, prepare the accompaniments. Slice the 1 medium cucumber into thin rounds. Have the 4 hard-boiled eggs ready.
  5. 5To serve, spoon the cooked cauliflower rice onto plates. Top with a cooked chicken thigh, 1 hard-boiled egg, and a portion of the sliced cucumber. Add 1 tbsp sambal, 1/8 cup fried anchovies, and 1 tbsp peanuts to each plate.
  6. 6Squeeze the juice of 1 lime over each serving just before eating.
