Ingredients

  • 1.5 lbs Firm white fish fillets
  • 2 tablespoons Coconut oil
  • 1 medium Red onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 2 tablespoons Red curry paste
  • 1 teaspoon Turmeric powder
  • 1 can Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 5 oz Spinach

Instructions

  1. 1Heat coconut oil in a large pot over medium heat. Add chopped red onion and cook until softened.
  2. 2Add minced garlic and grated ginger, cook for another minute until fragrant.
  3. 3Stir in red curry paste and turmeric powder. Cook for 2 minutes.
  4. 4Pour in coconut milk and fish sauce. Bring to a simmer.
  5. 5Add fish fillets and cook for 5-7 minutes, or until fish is cooked through.
  6. 6Stir in spinach and cook until wilted.
  7. 7Stir in lime juice before serving.
