Keto Lecsó with Sausage

A hearty and flavorful Hungarian vegetable stew with sausage, adapted for a ketogenic diet. Perfect as a standalone dish or served with cauliflower rice.

Ingredients

  • 1 lb Hungarian sausage (csabai or gyulai)
  • 3 medium Bell peppers (mix of colors)
  • 1 lb Tomatoes
  • 1 medium Onion
  • 1 tbsp Smoked paprika
  • 2 tbsp Lard
  • 4 cups Cauliflower Rice

Instructions

  1. 1Place a large heavy-bottomed pot or Dutch oven over medium heat (350°F/175°C). Add the 2 tablespoons of lard and let it melt and shimmer.
  2. 2Add the 1 medium onion, cut into 1/2-inch pieces, to the pot. Cook, stirring occasionally, for 5-7 minutes, or until the onion is softened and translucent.
  3. 3Add the 1 lb Hungarian sausage, cut into 1-inch pieces, to the pot. Cook, stirring occasionally, for 8-10 minutes, or until the sausage is browned on all sides.
  4. 4Add the 3 medium bell peppers, cut into 1-inch pieces, to the pot. Cook, stirring occasionally, for 5 minutes, or until the bell peppers are slightly softened.
  5. 5Add the 1 lb tomatoes, diced, and the 1 tablespoon of smoked paprika to the pot. Stir everything together. Bring the mixture to a simmer, then reduce the heat to low (250°F/120°C), cover the pot, and cook for 20-25 minutes, or until the vegetables are tender.
  6. 6Serve the Keto Lecsó hot. Serve it over the 4 cups of cauliflower rice.
