Ingredients

  • 1.5 lbs Lamb shoulder
  • 4 medium Zucchini
  • 3/4 cup Tomato paste
  • 1 large Onion
  • 3 cloves Garlic
  • 1/4 cup Ground pumpkin seeds
  • 3 cups Lamb broth
  • 2 tbsp Olive oil
  • 1 tsp Ginger
  • 1 leaf Bay leaf
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 tsp Chili flakes

Instructions

  1. 1Cut the lamb shoulder into 1-inch cubes and season with salt and pepper.
  2. 2Heat olive oil in a large pot over medium-high heat. Brown the lamb cubes on all sides.
  3. 3Add chopped onion and minced garlic and cook until softened, about 5 minutes.
  4. 4Stir in tomato paste, ground pumpkin seeds, ginger, chili flakes, and cook for 2 minutes.
  5. 5Pour in lamb broth and add the bay leaf. Bring to a simmer.
  6. 6Reduce heat, cover, and cook for 45-50 minutes, or until the lamb is tender.
  7. 7While the lamb is cooking, spiralize the zucchini into noodles.
  8. 8Serve the lamb domoda over zucchini noodles.
