Keto Korean BBQ Salmon with Sesame Spinach

Ingredients

  • 4 Salmon Fillets
  • 1/4 cup Coconut Aminos
  • 1 tbsp Erythritol
  • 1 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 8 oz Spinach
  • 1 tsp Sesame Seeds

Instructions

  1. 1In a bowl, whisk together coconut aminos, erythritol, rice vinegar, sesame oil, minced garlic, and grated ginger.
  2. 2Marinate salmon fillets in the sauce for at least 10 minutes.
  3. 3Grill or bake salmon at 400°F (200°C) for 12-15 minutes, or until cooked through.
  4. 4While the salmon is cooking, sauté spinach with a little sesame oil until wilted.
  5. 5Sprinkle spinach with sesame seeds before serving alongside the salmon.
