Ingredients

  • 1.5 lbs Chicken Thighs
  • 1 medium Onion
  • 3 tablespoons Lemon Juice
  • 3 tablespoons Olive Oil
  • 1/2 teaspoon Saffron Threads
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 medium Cucumber
  • 2 medium Tomato
  • 1/4 medium Red Onion
  • 1/4 cup Fresh Parsley
  • 1 tablespoon Mint
  • 2 tablespoons Lime Juice
  • 1 tablespoon Olive Oil

Instructions

  1. 1Soak saffron threads in 2 tablespoons of hot water for 15 minutes.
  2. 2Cut chicken thighs into bite-sized pieces. In a bowl, combine chicken, grated onion, lemon juice, olive oil, saffron water, salt, and pepper. Marinate for at least 2 hours, or overnight.
  3. 3Thread the marinated chicken onto skewers.
  4. 4Grill the skewers over medium heat for 5-7 minutes per side, or until cooked through.
  5. 5To make Shirazi salad, dice cucumber, tomato, and red onion. Chop fresh parsley and mint.
  6. 6In a bowl, combine the diced vegetables and herbs. Dress with lime juice and olive oil. Season with salt and pepper.
  7. 7Serve the Joojeh Kabab with Shirazi Salad.
