Ingredients

  • 4 Pork cutlets
  • 1 lb Mushrooms
  • 1 cup Heavy cream
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Butter
  • 0.5 tsp Xanthan gum
  • 0.5 tsp Salt
  • 0.25 tsp Pepper

Instructions

  1. 1Season pork cutlets with salt and pepper.
  2. 2Melt 1 tbsp butter in a large skillet over medium-high heat. Sear pork cutlets for 2-3 minutes per side, until browned. Remove from skillet and set aside.
  3. 3Add remaining butter to the skillet. Sauté sliced mushrooms and chopped onion until softened.
  4. 4Add minced garlic and cook for 1 minute. Pour in heavy cream and bring to a simmer.
  5. 5Whisk in xanthan gum to thicken the sauce. Simmer for 5 minutes, or until the sauce has thickened.
  6. 6Return pork cutlets to the skillet. Spoon mushroom sauce over the cutlets. Heat through. Serve immediately.
