Keto Japchae with Shirataki Noodles

A keto-friendly version of Japchae, a popular Korean glass noodle dish, using shirataki noodles and stir-fried vegetables.

Ingredients

  • 16 oz Shirataki Noodles
  • 1/2 lb Beef Sirloin
  • 1 medium Carrot
  • 1/2 medium Onion
  • 1/2 medium Bell Pepper (any color)
  • 2 cups Spinach
  • 3 tbsp Soy Sauce (Tamari for Gluten-Free)
  • 1 tbsp Erythritol or Monk Fruit Sweetener
  • 2 cloves Garlic
  • 2 tbsp Sesame Oil
  • 1/4 tsp Black Pepper
  • 2 tbsp Avocado Oil

Instructions

  1. 1Rinse the 16 oz Shirataki Noodles thoroughly under cold water, then pat them very dry with paper towels. If you prefer shorter noodles, cut them into desired lengths now.
  2. 2Slice the 1/2 lb Beef Sirloin into thin strips, about 1/4-inch thick. Julienne the 1 medium Carrot and the 1/2 medium Bell Pepper into thin matchsticks. Finely chop the 1/2 medium Onion.
  3. 3In a medium bowl, combine the sliced beef sirloin with 1 tablespoon of the 3 tbsp Soy Sauce (or Tamari), the 2 cloves of minced Garlic, 1 tablespoon of Erythritol (or Monk Fruit Sweetener), 1 tablespoon of the 2 tbsp Sesame Oil, and the 1/4 tsp Black Pepper. Mix well to coat the beef and let it marinate for at least 10 minutes.
  4. 4Heat 1 tablespoon of the 2 tbsp Avocado Oil in a large 12-inch skillet or wok over medium-high heat (400°F / 200°C). Add the marinated beef in a single layer and stir-fry for 3-5 minutes, or until browned and cooked through. Transfer the cooked beef to a clean plate and set aside.
  5. 5Add the remaining 1 tablespoon of Avocado Oil to the same skillet and heat over medium-high heat (400°F / 200°C). Add the julienned carrot, chopped onion, and julienned bell pepper. Stir-fry for 4-6 minutes, until the vegetables are tender-crisp.
  6. 6Add the 2 cups of Spinach to the skillet with the vegetables and stir-fry for 1-2 minutes, until the spinach is just wilted.
  7. 7Add the rinsed and dried 16 oz Shirataki Noodles to the skillet along with the remaining 2 tablespoons of Soy Sauce (or Tamari) and the remaining 1 tablespoon of Sesame Oil. Stir-fry for 2-3 minutes, until the noodles are heated through and well combined with the vegetables.
  8. 8Return the cooked beef to the skillet with the noodles and vegetables. Toss everything together gently for 1 minute to ensure it is all heated through.
  9. 9Serve the Keto Japchae immediately.
