Ingredients

  • 1 cup Coconut flour
  • 2 tbsp Psyllium husk powder
  • 1 tsp Baking powder
  • 1 tbsp Apple cider vinegar
  • 1.5 cups Water
  • 0.5 tsp Salt

Instructions

  1. 1In a large bowl, whisk together coconut flour, psyllium husk powder, baking powder, and salt.
  2. 2Add apple cider vinegar and water to the dry ingredients. Mix well until a smooth batter forms. Let the batter sit for 5-10 minutes to allow the psyllium husk to absorb the liquid and thicken the mixture.
  3. 3Heat a lightly oiled non-stick skillet or griddle over medium heat.
  4. 4Pour about 1/4 cup of batter onto the hot skillet, spreading it thinly into a round shape.
  5. 5Cook for 3-4 minutes per side, or until the flatbread is set and lightly browned.
  6. 6Repeat with the remaining batter.
  7. 7Serve warm as a keto-friendly alternative to injera with your favorite Ethiopian dishes.
