Keto Hutspot with Cauliflower and Sausage

A keto-friendly version of the classic Dutch dish, Hutspot, replacing potatoes with cauliflower for a low-carb, flavorful and comforting meal.

Ingredients

  • 1 lb Cauliflower florets
  • 1 lb Carrots, sliced
  • 1 Onion, chopped
  • 1 lb Smoked Sausage
  • 2 tbsp Butter
  • 1/4 cup Heavy Cream
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1In a large pot, combine the cauliflower, carrots, and onion.
  2. 2Add enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
  3. 3While the vegetables are cooking, slice the smoked sausage and set aside.
  4. 4Drain the vegetables, reserving about 1/2 cup of the cooking liquid.
  5. 5Return the vegetables to the pot. Add the butter and heavy cream.
  6. 6Mash the vegetables with a potato masher or use an immersion blender to create a smooth mixture. Add some of the reserved cooking liquid if needed to reach the desired consistency.
  7. 7Stir in the sliced smoked sausage and heat through.
  8. 8Season with salt and pepper to taste.
  9. 9Serve hot.
