Keto Hungarian Stuffed Peppers

Ingredients

  • 4 Bell peppers (various colors)
  • 1 lb Ground beef
  • 1.5 cups Cauliflower rice
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1.5 cups Tomato sauce, no sugar added
  • 2 tbsp Paprika
  • 1 tsp Caraway seeds
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C). Take the 4 bell peppers and carefully cut each one in half lengthwise. Use a spoon or your hands to remove all seeds and white membranes from the inside of each of the 8 pepper halves.
  2. 2In a large skillet, heat the 1 tbsp of olive oil over medium heat. Add the 1 medium chopped onion and cook for 5-7 minutes, stirring occasionally, until it softens and becomes translucent. Add the 2 cloves of minced garlic and cook for another 1 minute until fragrant, being careful not to burn the garlic.
  3. 3Transfer the cooked onion and garlic from the skillet into a large bowl. Add the 1 lb of ground beef, 1.5 cups of cauliflower rice, 2 tbsp of paprika, 1 tsp of caraway seeds, and salt and pepper to taste. Use your hands to thoroughly mix all the ingredients together until they are evenly combined.
  4. 4Carefully spoon the prepared meat and cauliflower mixture into each of the 8 bell pepper halves, filling them generously and mounding the mixture slightly.
  5. 5Arrange the 8 stuffed bell pepper halves in a single layer in a baking dish large enough to hold them without crowding. Pour the 1.5 cups of no sugar added tomato sauce evenly over the stuffed peppers in the dish.
  6. 6Place the baking dish into the preheated oven. Bake for 40-45 minutes, or until the bell peppers are tender when poked with a fork and the ground beef mixture is cooked through. To ensure doneness, the internal temperature of the ground beef should reach 160°F (71°C).
