Keto Hungarian Porkolt with Zucchini Noodles

Ingredients

  • 1.5 lbs Pork Shoulder
  • 3 medium Zucchini
  • 1 large Onion
  • 3 cloves Garlic
  • 2 tbsp Tomato Paste
  • 2 cups Beef Broth
  • 2 tbsp Sweet Paprika
  • 1 tsp Caraway Seeds
  • 3 slices Bacon
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Cut the pork shoulder into 1-inch cubes. Chop the onion and mince the garlic. Spiralize the zucchini into noodles.
  2. 2In a large Dutch oven or pot, cook bacon until crispy. Remove bacon and set aside, reserving bacon fat.
  3. 3Add olive oil to the pot with the bacon fat and heat over medium heat. Brown the pork in batches, then set aside.
  4. 4Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  5. 5Stir in tomato paste, sweet paprika, and caraway seeds. Cook for another minute.
  6. 6Return the pork to the pot. Pour in beef broth. Season with salt and pepper.
  7. 7Bring to a simmer, then cover and cook for 1-1.5 hours, or until the pork is very tender.
  8. 8Serve the Porkolt over zucchini noodles. Crumble the cooked bacon over the top.
