Keto Hungarian Meatballs with Zucchini Noodles

Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 1 Egg
  • 1/2 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Sweet paprika
  • 1 tsp Smoked paprika
  • 1 tbsp Coconut aminos
  • 4 medium Zucchini, spiralized
  • 1.5 cups Tomato sauce, no sugar added
  • 2 tbsp Olive oil
  • 0.75 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1In a large bowl, combine ground beef, ground pork, egg, finely chopped onion, minced garlic, sweet paprika, smoked paprika, coconut aminos, salt, and pepper.
  2. 2Mix well and form into meatballs.
  3. 3Heat olive oil in a large skillet over medium heat.
  4. 4Add the meatballs to the skillet and brown on all sides.
  5. 5Pour the tomato sauce over the meatballs. Bring to a simmer, then reduce heat, cover, and cook for 20 minutes, or until the meatballs are cooked through.
  6. 6While the meatballs are cooking, sauté the zucchini noodles in a separate skillet until slightly softened.
  7. 7Serve the meatballs and sauce over the zucchini noodles.
