Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 Egg
  • 1/4 cup Almond flour
  • 2 tbsp Paprika
  • 1 tsp Caraway seeds
  • 4 medium Zucchini, spiralized
  • 1.5 cups Tomato sauce, no sugar added
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions

  1. 1In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, egg, almond flour, paprika, caraway seeds, salt, and pepper.
  2. 2Mix well with your hands until all ingredients are evenly distributed.
  3. 3Form the mixture into meatballs, about 1.5 inches in diameter.
  4. 4Heat olive oil in a large skillet over medium heat.
  5. 5Brown the meatballs on all sides, then pour tomato sauce over them.
  6. 6Reduce heat, cover, and simmer for 25-30 minutes, or until meatballs are cooked through.
  7. 7While meatballs are simmering, spiralize zucchini into noodles.
  8. 8Serve meatballs and sauce over zucchini noodles.
