Ingredients

  • 1 Whole Chicken
  • 4 slices Ginger
  • 2 Green Onions
  • 4 cloves Garlic
  • 4 cups Cauliflower Rice
  • 8 cups Chicken Broth
  • 2 tbsp Coconut Aminos
  • 1 tsp Sesame Oil
  • 2 tbsp Chili Garlic Sauce (Soy-Free)

Instructions

  1. 1Rinse the chicken thoroughly and pat it dry.
  2. 2Stuff the cavity with ginger slices and green onions.
  3. 3In a large pot, bring chicken broth to a boil. Gently lower the chicken into the broth.
  4. 4Reduce heat and simmer for 35-40 minutes, or until the chicken is cooked through.
  5. 5Remove the chicken from the pot and let it cool slightly.
  6. 6While the chicken is cooking, prepare the cauliflower rice. Sauté garlic in sesame oil until fragrant.
  7. 7Add cauliflower rice and cook until tender.
  8. 8Shred the chicken meat and serve over the cauliflower rice.
  9. 9Serve with a dipping sauce made of coconut aminos and soy-free chili garlic sauce.
