A keto-friendly version of the famous Hainanese Chicken Rice, substituting rice with cauliflower rice and using coconut aminos to replace soy sauce in the dipping sauce.

Ingredients

  • 3 lbs Whole Chicken
  • 4 slices Ginger
  • 2 Green Onions
  • 4 cups Cauliflower Rice
  • 2 cups Chicken Broth
  • 3 tbsp Coconut Aminos
  • 1 tsp Sesame Oil
  • 2 cloves Garlic
  • 1 tsp Ginger
  • to taste Salt

Instructions

  1. 1Rinse the chicken thoroughly. Place ginger slices and green onions inside the chicken cavity.
  2. 2In a large pot, submerge the chicken in water. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes, or until the chicken is cooked through.
  3. 3Remove the chicken from the pot and let it cool slightly. Reserve the chicken broth.
  4. 4While the chicken is cooling, sauté the cauliflower rice in 1 tbsp of chicken broth until tender and slightly browned. Season with salt.
  5. 5For the dipping sauce, combine coconut aminos, sesame oil, minced garlic, and minced ginger in a small bowl.
  6. 6Carve the chicken and serve with cauliflower rice and dipping sauce.
