Ingredients

  • 1 lb Ground beef
  • 4 cups Cauliflower rice
  • 1/2 cup Tomato paste
  • 1 medium Onion
  • 2 cloves Garlic
  • 1/4 cup Ground sunflower seeds
  • 2 cups Beef broth
  • 2 tbsp Olive oil
  • 1 medium Sweet potato
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1/4 tsp Cayenne pepper

Instructions

  1. 1Heat the 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat, which is 350°F (177°C). Add the 1 pound of ground beef and cook, breaking it apart with a spoon, until it is browned all over, about 5-7 minutes.
  2. 2Add the 1 medium onion, chopped into 1/2-inch pieces, and the 2 cloves of garlic, minced. Cook, stirring occasionally, until the onion is softened and looks slightly see-through, about 5 minutes.
  3. 3Stir in the 1/2 cup of tomato paste, the 1/4 cup of ground sunflower seeds, the 1 teaspoon of smoked paprika, the 1/2 teaspoon of black pepper, and the 1 teaspoon of salt. Cook, stirring constantly, for 2 minutes until fragrant.
  4. 4Pour in the 2 cups of beef broth and stir everything together. Bring the mixture to a gentle simmer.
  5. 5Add the 1 medium sweet potato, peeled and cut into 1/2-inch cubes. Reduce the heat to low, cover the pot, and cook for 25-30 minutes. The sauce should have thickened, and the sweet potato should be easily pierced with a fork.
  6. 6While the mafe is simmering, prepare the 4 cups of cauliflower rice. If using pre-riced cauliflower, heat a separate non-stick skillet over medium-high heat (375°F/190°C) and cook the cauliflower rice for 5-7 minutes, stirring often, until tender. If you are processing your own cauliflower, pulse cauliflower florets in a food processor until they resemble rice, then sauté as described.
  7. 7Serve the hot beef mafe spooned over the prepared cauliflower rice.
