Keto Ground Beef Enchilada Skillet

Ingredients

  • 1 lb Ground Beef
  • 1 medium Onion
  • 1 medium Bell Pepper
  • 1 cup Enchilada Sauce
  • 1 cup Shredded Cheddar Cheese
  • 1 tbsp Olive Oil
  • 1 medium Avocado
  • 1/2 cup Sour Cream

Instructions

  1. 1Heat the 1 tablespoon of olive oil in a 10-inch skillet over medium-high heat, which is about 375°F (190°C).
  2. 2Add the 1 pound of ground beef to the hot skillet. Cook for 5-7 minutes, breaking it up into small pieces with a spoon, until it is no longer pink and is nicely browned.
  3. 3Add the chopped 1 medium onion and the chopped 1 medium bell pepper to the skillet with the beef. Cook for another 5-7 minutes, stirring occasionally, until the vegetables have softened.
  4. 4Pour in the 1 cup of enchilada sauce and stir everything together. Bring the mixture to a gentle simmer and let it cook for 2 minutes.
  5. 5Sprinkle the 1 cup of shredded cheddar cheese evenly over the top of the mixture in the skillet. Cover the skillet with a lid and reduce the heat to low. Let it cook for 3-5 minutes, or until the cheese is completely melted and gooey.
