Ingredients

  • 4 large Bell peppers (various colors)
  • 1 lb Ground turkey
  • 2 tablespoons Olive oil
  • 0.5 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Cauliflower rice
  • 6 oz Tomato paste
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Dried basil
  • 0.75 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Water

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cut bell peppers in half lengthwise and remove seeds and membranes.
  3. 3In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  4. 4Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned, about 7-8 minutes.
  5. 5Stir in minced garlic, cauliflower rice, tomato paste, oregano, basil, salt, and pepper. Cook for another 2 minutes.
  6. 6Stuff each bell pepper half with the ground turkey mixture.
  7. 7Place the stuffed peppers in a baking dish and add water to the bottom of the dish.
  8. 8Bake for 40-45 minutes, or until peppers are tender.
