Ingredients

  • about 680 g Chicken Thighs
  • 1/4 cup Olive Oil
  • 3 tbsp Lemon Juice
  • 3 cloves Garlic
  • 2 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 medium Red Onion
  • 1 medium Bell Peppers

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Cut the about 680 g Chicken Thighs into 2.54 cm cubes.
  2. 2In a bowl, whisk together the 1/4 cup Olive Oil, 3 tbsp Lemon Juice, 3 cloves minced Garlic, 2 tsp Dried Oregano, 1 tsp Salt, and 1/2 tsp Black Pepper until well combined.
  3. 3Add the about 680 g Chicken Thighs cubes to the marinade and toss them until they are completely coated. Cover the bowl and place it in the refrigerator to marinate for at least 30 minutes, or up to 4 hours.
  4. 4Prepare your grill for medium-high heat. For gas grills, this is typically around 204.4-232.2°C (200-230°C).
  5. 5Cut the 1/2 medium Red Onion into 2.54 cm pieces. Cut the 1 medium Bell Peppers into 2.54 cm pieces.
  6. 6Thread the marinated chicken pieces onto skewers, alternating them with the 2.54 cm pieces of red onion and bell pepper. Aim to fill each skewer without overcrowding.
  7. 7Place the skewers on the preheated grill. Grill for 12-15 minutes, turning them occasionally, until the chicken is cooked through and reaches an internal temperature of 74°C, and the vegetables are tender and slightly charred.
  8. 8Remove the skewers from the grill and let them rest for 5 minutes before serving. This allows the juices in the chicken to redistribute, keeping it tender.
