Ingredients

  • 2 lb Collard greens
  • 1 large Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Niter Kibbeh (spiced clarified butter)
  • 0.5 cup Sunflower seeds
  • 2 tbsp Berbere spice blend
  • 0.5 cup Coconut milk
  • 1 tsp Salt

Instructions

  1. 1Prepare Gomen: Wash and chop collard greens into bite-sized pieces.
  2. 2In a large pot, sauté finely chopped onions in Niter Kibbeh until softened.
  3. 3Add minced garlic and ginger; cook for another minute. Add the chopped collard greens and salt. Cook until collard greens are tender, about 20-30 minutes.
  4. 4Prepare Peanut-Free 'Shiro': In a blender, combine sunflower seeds, Berbere spice blend, coconut milk, and enough water to form a smooth sauce.
  5. 5Pour the sauce over the cooked collard greens and simmer for another 10-15 minutes to allow the flavors to meld.
  6. 6Serve Gomen with Peanut-Free 'Shiro' hot.
